Palermo Hotel & Resort’s Chef Kenny Nakai provides a taste of Hawaii with menus featuring local fish caught daily by San Juan’s fleet. A popular item is crisply prepared fish strips coated with coconut, honey, almonds, ginger and spices and served with sweet and sour or peanut dipping sauce. Locally grown organic greens and guavas feature in daily salads with chicken or shellfish. Poolside bar and restaurant offer panoramic ocean views and breezes. They search out the freshest organic products available in Nicaragua to serve their guests. Healthy and vegetarian entrees available at each meal. Children’s menu upon request.
