• The Brasserie du Grand Chêne

Conceived in a typically Parisian spirit, the Brasserie du Grand Chêne conserves all the charm of the Parisian brasseries of old. Wall seats in green leather, polished wood, brass ornaments, and solid wood staircase gives it an atmosphere which the greatest of stars appreciate. At Grand Chêne, traditional Parisian dishes invite themselves on to your plate, such as onion soup, Bourgogne snails, beef entrecote, sauerkraut, pot-au-feu, Zurich sliced veal, and when in season, a seafood platter.

• Palace Sushi Zen

This cuisine is crafted by four Japanese chefs, four “Sushi Masters”, who have come especially from Japan to join the team at the Lausanne Palace & Spa bringing all of their expertise and commitment to quality food. The Palace Sushi Zen offers you all the specialities of the traditional Japanese cuisine including: sushi and sashimi, udon noodles, and Soba soup. You can also discover the specialities of their Itamaesan Kohji enjoying a nigiri unagi camembert, maguro foie gras or uzura gunkan caviar with quail eggs and sturgeon.

The Cellar of the Lausanne Palace & Spa is full of vintage treasures: nearly 8000 references are calibrated in their alleys. Swiss wines are of course cheerfully represented in this cellar of exclusive reserves which focuses on the Swiss speaking regions of Lavaux, Valais, and Geneva. As for the Burgundies and Bordeaux the greatest vintages are coming from owners reputed as guaranteeing an irreproachable quality. Far from setting aside the renowned vintages of the world the wine cellar offers wines from New Zealand, South Africa, California, and Chile.
